Let's say Formula 1 cars matter a lot but that's also because you have the worlds best drivers there. In a school quidditch game the skill gaps are bigger so you can beat someone with inferior equipment.

I agree it's not entirely fair but this is similar to real life. It's clear Hogwarts doesn't have a lot of money since the school brooms are described as useless. The game would be pointless if everyone had to play on those.

I think in the Hogwarts quidditch league it's the overall points that count, not winning or losing. So if you are 200 points down it's still the best option to catch the snitch because if your opponent catches it you are in a much worse situation due to the point difference. Of course this wouldn't apply to a knockout tournament such as the World Cup.
