Gary Welding, for that match against Colin Lloyd at the 2006 World Championship. Lloyd blitzed him in the first 2 sets, averaging around 107 at that point. Welding responded with a 100+ average set of his own in the third set. Then the match became scrappy, and it was Welding who got over the finish line.
I don't think Lloyd 100% recovered from that loss. It was the timing of how it happened that must have hurt most.

Andy Smith won a 2007 Pro Tour in Scotland by beating James Wade in the final with a 108 average.
