I really like Happy Gimore. I also found Waterboy, Big Daddy and Billy Madison to be reasonable enough.
No idea if they've aged well.
I haven't seen anything he's been in for 20 years or so.

I haven't seen either of these but they received terrible reviews. Why did you bother watching both of them?
The only Sandler movie I've watched since Happy Gilmore and Big Daddy would be Murder Mystery on Netflix. Was at a friend's place, I didn't choose it and it was just boring. Not enjoyable in any way.

I am a loonie enough to have gone out of my way to see some of the films that make the worst films of all time lists. I actually quite liked “That’s My Boy”, only seen it once though and the only reason I actually watched it in the first place was because Andy Samberg is in it

The problem with Sandler is that he could do much better, he could even become an average comedian, even subpar Jewish comedian.
But he learned early that he can earn some serious money with minimum effort and he chose, wisely, that path.
I believe he was even sacked from SNL for being untalented, and that says a lot.
