Well your tastes are clearly different to mine, but I do think in seasons 3 and 4 you might like:

Yesterdays Enterprise (time travel)
Sins of the Father (Klingon civil war beginning)
Best of both worlds (Borg attack earth)
S4
Family (Borg fallout)
Future imperfect (Time travel)
Clues (Mass memory loss)
The nth degree (flowers for algeron analog)
The drumhead (witchhunts provoked by a romulan spy)
The minds eye (Manchurian candidate analog)
Redemption (Klingon civil war main)
If you like enough of them ill recomend for the other seasons.

Yeh good luck with ds9 season 1 also. Of course its a zillion times better than tng s1 but i think the only eps ive rewatched any time recently are the first one emissary and the 19th one Duet. Duet is very very good however.
Another problem you will have with ds9 is that its the only star trek series that has an overall story and plot throughout the entire show, and it takes until the 2nd episode of season three to make clear what the plot is and how its going to progress.
For the first two seasons it meanders so much its impossible not to wonder what the hell the point of it all is.

It will be, but you may find it not good enough regardless. I am also very confident the characters of Quark and Bashir will annoy you.

I've seen clips of the episode which crosses over with the trouble with tribbles but that's it
Hopefully it has some characterization that tng is missing completely

One thing it definitely does do is that it goes about fleshing out the characters faster than tng.
