But I liked Chef as a character but wasn’t exactly upset that he’d never return.
Aye, Hayes died in August of 2008.

In early 2006, Hayes' entourage apparently sent a letter to Comedy Central in Hayes' name requesting for him to be released from his contract. They weren't happy with how the show presented scientology. Their request was presumably granted.

The Chef character was an after-thought as the series progressed imo. He was more relevant to the show in its early seasons, which haven't aged especially well imo.
One of his sons came out and said that was all bollox.

But I can see why Parker and Stone would have been annoyed with Hayes at the time.

Chef was the voice of reason for the boys and one of the very few sensible adults in the town.
But you’re correct, after season 7/8, he started become less relevant in the show.
Perhaps due to Hayes’ declining health?

I’m sure Matt Stone regrets saying what he said at the time.
Series co-creator and writer Matt Stone commented in a manner that suggested that Hayes practiced a double standard regarding the treatment of religion on South Park: "[We] never heard a peep out of Isaac in any way until we did Scientology. He wants a different standard for religions other than his own, and to me, that is where intolerance and bigotry begin."
